Scott’s Famous Barbecue is our 108-year-old family business founded by my father Adam Scott in 1917 in Goldsboro, North Carolina. He came to be known as “The Barbecue King” because he was one of the first pitmasters to cook the whole hog. He became famous for his zesty and full-flavored vinegar-based hot sauce. The American Royal Barbecue Hall of Fame ®, an entity that aims to recognize, document and preserve the heritage of barbecue, announced in its 42nd year, he was included in its elite Class of 2022 Hall of Fame inductees as a Legacy Member for his achievement and service. The press release of May 25, 2022, noted "he founded one of the oldest sit-down barbecue restaurants in the nation and was known for his sauce recipe". "Induction into the Barbecue Hall of Fame is barbecue's top honor."-Jackie McClaskey, Interim CEO of the American Royal Association.

The business my father started is still up and running as Scott’s Sauce Company. Our family business has the distinction of producing the oldest commercially produced sauce today, and it continues to garner fans all over the world. We have been featured in Saveur Magazine, Southern Living Magazine, Bon Appetit Magazine, The New York Times, on PBS, and in countless books about Who’s Who in Barbecue in America.
The Scott Group introduces you to our gourmet sauces recreating his secret sauce recipe and a collection of our family recipes of southern comfort foods.
Adam’s Fire™ Hot Sauce, recreates my father’s original award winning 1917 recipe. When you taste it, you’ll know why he was invited to serve at Franklin Roosevelt’s Presidential Inauguration and why he was the personal BBQ chef for RJ Reynolds, Jr. and James Hanes of the textile family in Winston-Salem, NC. It’s the perfect combination of “liquid love”, fire and flavor, and my tribute to the man and the legend.
Limited Edition Pitmaster’s Prize™ BBQ Sauces, Pitmaster's Legacy™, and Pitmaster's Specialty™ BBQ sauces are zesty, vinegar based, tangy and robust BBQ sauces which will delight your tastebuds. They were created with my Father's secret recipe as the base.
FoodFiles© is a great resource for the various dishes you can make using hot sauce/barbecue sauce. You’ll get the added flavor and flair. Many will recognize dishes from our restaurants in each edition which features family photos, vintage ads, and news clippings that tell our story.
It's all in how you use it!
I always loved my Dad's hot sauce. But I have always hated BBQ Sauce. I thought BBQ sauces were too thick and too sweet.
That's why I created Pitmaster's Prize™, Pitmaster's Legacy™, and Pitmaster's Specialty™ BBQ Sauces. They're not too thick and not too sweet.
The vinegar base helps to make them a thinner BBQ sauce, and that lends itself to make a great marinade. It also helps me easily fill those mini bottles. You wouldn't want a sauce that doesn't come out of the bottle, would you?
The corn starch in the recipe then acts like MAGIC.
If you want a thicker sauce ... to make it last longer ... and for brushing on and dipping ... just heat it. The more heat, the thicker it gets.
Because of the vinegar, it will thicken... but won't get too thick.
And that's how you use my sauce to become BBQ sauce the way you like it!
I hope you enjoy making these sauces and recipes whether you are at a table for one or many.
I invite you to join me on this journey of the next generation of The Scott Group as we celebrate eastern North Carolina’s vinegar-based barbecue heritage and southern comfort food recipes which is our legacy. – Ava Marie Scott
